Picky Picnic Picks

Looking for the best way to enjoy the weather and spend time with your friends this summer? Take advantage of National Picnic Month!  

With the sunny July weather comes the perfect time to plan a picnic in nature. A successful picnic is comprised of three things: great friends, beautiful weather, and delicious snacks. As a picky eater, the latter can be hard for me to achieve. While I can’t share my friends’ phone numbers or control the weather, I can offer you some recipes that will make your picnic fun and flavorful for even the pickiest of eaters.

Charcuterie Board

A charcuterie board is a classic for every picnic. The best thing about charcuterie boards is that they are versatile. Cheese boards may be the first thing that comes to your mind, but there are many different foods to choose from when creating your charcuterie board. One of my favorites is a peanut butter board, but you can also center them around fruit, hummus, or even chocolate!

Yogurt Parfaits

Yogurt Parfaits are quick and easy snacks that you can prep ahead of time for your picnic. They are refreshing and– just like the charcuterie boards –can be customized just for you! Surprise your friends by making them jars with their favorite fruit, granola, and yogurt. Not only are they great for picnics, but they also make a quick and healthy breakfast.

Apple Cookies

This tasty treat will take apple slices and peanut butter to a whole new level. Apple cookies are apple slices that have been cut horizontally to resemble the shape of a cookie. Spread peanut butter on top of your slices and sprinkle on the toppings of your choice! These “cookies” can be served with almonds, chocolate chips, cashews, and more depending on your preference.

 

Popsicles

What’s better than a cool refreshing popsicle when you’re trying to beat the summer heat? The best thing about homemade popsicles is that they can be personalized, and they are easy to make! Just get a popsicle mold, grab some lemonade from the fridge, and you’re all set. You can mix up your popsicles by using different drinks or yogurt. I also recommend incorporating your favorite fruit or pieces of crumbled cookies.
