Summer meals that make you feel good

You deserve to feel good about what you’re eating throughout the day. Here are a few meal ideas for you and your friends to try as Auburn summer weather is approaching.

Breakfast:

I’m sure you’ve heard that breakfast is the most important meal of the day. It’s true. Start the day right with these breakfast ideas.

Avocado Egg Toast: Packed with protein and perfect for when you’re not avoiding something sweet. Take a ripe avocado, slice into pieces, and smash it on the toast with a fork. Cook the egg (scrambled, poached, fried, any way you like!) and place it on top of the fresh avocado.

 Yogurt Parfaits: All you need is: vanilla Greek yogurt, granola, and any berries of your choice. Place them on top of each other in the respective order and enjoy a sweet refreshing breakfast for a hot summer day.

Lunch:

For some of us, this is our favorite meal of the day. For me, I just want to get through it so that dinner comes faster! Here is one meal that makes lunch exciting!

Grilled Chicken Wrap: Cook your chicken with your favorite seasonings in a pan, cut into pieces and place in a tortilla. Top with iceberg lettuce and your favorite sauce. Lunch just became a meal you won’t want to miss.

Dinner:

Now, dinner is most of our favorite meals of the day. Endless options and a celebratory meal after a long, hot summer day.

Grilled Bruschetta Chicken: Coat chicken with oil, Italian seasoning, garlic powder, and black pepper. Grill and top with a slice of mozzarella cheese, tomatoes, salt and pepper, lemon juice, and basil. A quick and easy meal where summer tomatoes are the star of the plate.
