Protein Chocolate Chip Cookie Recipe

May 15th is National Chocolate Chip Day, and what better way to celebrate than baking healthy, protein-filled chocolate chip cookies.

Before starting the recipe, here are the ingredients and kitchen utensils needed.

Ingredients Needed:

  • 2 eggs

  • 1 ½ cups unsalted peanut butter (can substitute for almond, salted, or other alternative of peanut butter)

  • ½ cup granulated brown sugar (can substitute for white, coconut, or other kind of sugar)

  • 1 teaspoon vanilla extract

  • ½ cup vanilla protein powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt (don’t include if the Peanut Butter was salted)

  • ½ cup chocolate chips

Kitchen Utensils Needed:

  • A large bowl for mixing the batter

  • A whisk

  • A spatula

  • A cookie sheet pan

  • Parchment paper

Now you are ready to begin!

Step 1: Preheat the oven to 350 degrees Fahrenheit.

Step 2: Whisk together 2 eggs, 1 ½ cups of unsalted peanut butter, ½ cup brown sugar, and 1 teaspoon vanilla extract until the mixture is smooth.

Step 3: Mix in the ½ cup vanilla protein powder, the ½ teaspoon baking soda, and the ¼ teaspoon of salt. But don’t include the salt if the peanut butter used is already salted. Mix until achieving a thick batter.

Step 4: Add the ½ cup of chocolate chips. Mix until the chips are evenly distributed.

Step 5: Scoop out of the batter with an ice cream scoop or a spoon and roll into balls. Spread the dough balls across the cookie sheet pan covered with parchment paper. They shouldn’t spread much while baking, so you don’t need to put them too far from each other.

Step 6: Bake for 8-12 minutes.

Step 7: Let the cookies cool for around 10 minutes allowing them to harden slightly.

Except for a few distant cousins, Nathan and his twin brother are the first in their family to attend Auburn, with the entirety of his family being LSU alum. In the years following graduation, Nathan plans to become a licensed architect and work at a firm in Texas or the Southeast. He hopes to improve low-income housing and create a more walkable city environment.
