Easy and Delicious Springtime Salads

Spring has finally sprung — and so have our taste buds.

We are always looking for easy new recipes to try, and what better way to get in the springtime mood than with some lettuce! Whether you’re on a health kick, or simply looking for some new recipes to try, check out these light and easy spring salads. 

“My Favorite” Green Salad

Servings: 2 meals or 4 side dishes
Ingredients: 

  • 4 ½ oz butter lettuce

  • 1/2 cup spring onions, red 

  • 1 tablespoon mustard, whole grain

  • 1 teaspoon pepper 

  • 1 teaspoon salt 

  • 1 teaspoon sugar 

  • 1/3 cup olive oil

  • 1/4 cup red wine vinegar 

  • 1 cup Panko breadcrumbs 

  • 4 oz Pecorino Romano 

Super Fresh Cucumber Salad

Servings: 2 meals or 4 side dishes
Ingredients: 

  • 1 lb Roma tomatoes, diced

  • 1 English cucumber, diced

  • 1/2 medium red onion, sliced

  • 2 avocados, diced

  • 2 tablespoons extra virgin olive oil or sunflower oil

  • 2 tablespoons fresh lemon juice (from 1 medium lemon)

  • 1/4 cup 1/2 bunch cilantro, chopped

  • 1 teaspoon sea salt or 3/4 tsp table salt

  • 1/8 teaspoon black pepper

Cantaloupe Cucumber Salad

Servings: 2 meals or 4 side dishes
Ingredients: 

  • 1 cantaloupe, halved and deseeded

  • 1 large cucumber, halved 

  • 2 oz feta cheese, crumbled

  • 2 tablespoons Olive oil

  • Juice of one lemon

  • Pinch of salt

  • 10 basil leaves, coarsely chopped

Strawberry Cucumber Spinach Salad

Servings: 2 meals or 4 side dishes
Ingredients:

  • 6 packed cups baby spinach

  • 1 ½ cup English cucumbers (I used the mini variety), sliced

  • 1 cup strawberries, sliced

  • 1 medium sweet apple, cored and chopped into cubes 

  • 3 oz feta cheese, crumbled

  • 1/4 cup toasted walnuts

  • 1/4 cup extra virgin olive oil

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon pure honey

  • 1 tablespoon dijon mustard

  • Salt and pepper to taste

Cucumber Basil Chicken Salad

Servings: 1 meal
Ingredients:

  • 1 cup cooked and shredded chicken breast

  • 1/4 cup diced English cucumber 

  • 2 teaspoons fresh basil, chopped

  • 1 tablespoon sour cream

  • 1 tablespoon white wine vinegar 

  • Freshly ground black pepper to taste
