This Fall’s Trendiest Recipes

Fall is here and pumpkin spice is officially the main character on social media. Every year, pumpkin sneaks its way into more and more recipes. This fall is no different, and these recipes are all over Instagram and TikTok. This year’s trendiest fall recipes are simple, pumpkin-filled, and delicious. Keep reading and try them out for yourself!


Pumpkin Cream Cold Brew

If you haven’t yet gone to Starbucks and dropped $6 on this drink… I’m impressed. The Pumpkin Cream Cold Brew quickly won over the tastebuds of PSL fans last fall and remains the star of the show this year. Of course, copycat recipes are all over social media. Here’s one you’ve got to try.

 

Ingredients:

1 tbsp heavy cream

8 oz cold brew

1 tbsp pumpkin puree

1 tsp pumpkin pie spice

1 tsp sweetener of choice

1 tsp vanilla (or pumpkin) syrup

1 handful ice

 

Instructions:

1)    Combine heavy cream, pumpkin puree, pumpkin pie spice, and sweetener into a cup.

2)    Mix together using a hand mixer or hand-held milk frother.

3)    In a separate cup, stir together ice, cold brew, and syrup.

4)    Once your heavy cream has frothed, pour on top of the cold brew.

5)    Top with more pumpkin pie spice and enjoy.

 


Pumpkin Spice Baked Oats

TikTok practically made baked oats a celebrity last winter. They’re picture-perfect and tasty with only a few ingredients. This fall, pumpkin jumped into the recipe, and it’s definitely worth a try.

 

Ingredients:

½ cup oats

1 tsp cinnamon

1 tsp nutmeg

½ cup almond milk

1 tsp baking powder

¼ cup pumpkin puree

2 tsp sweetener of choice

1 tbsp chocolate chips

 

Instructions:

1)    Preheat oven to 400 and grease a small baking dish.

2)    In a blender, combine oats, spices, almond milk, pumpkin, and sweetener.

3)    Blend until smooth, then stir in baking powder and chocolate chips.

4)    Pour into baking dish and bake for 20 minutes.

5)    Let cool and enjoy with your favorite toppings.

 



Pumpkin Pasta

Each season, TikTok seems to make a pasta dish go viral. Cheesy pumpkin rigatoni has taken the spotlight this fall, and it’s worth all the hype.

 

Ingredients:

2 servings rigatoni pasta

1 1/2 tbsp heavy cream

1/2 cup pumpkin puree

1 tbsp olive oil

1 tsp nutmeg

1 tsp minced garlic

¼ cup shredded parmesan

Salt and pepper to taste

 

Instructions:

1)    Boil water and cook pasta according to the box instructions.

2)    Heat olive oil and garlic in a saucepan over medium heat.

3)    Add pumpkin puree and heavy cream to the saucepan and cook for a few minutes.

4)    Add the spices, parmesan, and ¼ cup of pasta water.

5)    Drain pasta, combine with sauce, and enjoy.
